{Blueberry Oat Bars}



The mornings have been really cool and wonderful here the last couple of weeks. The kind of mornings where I can wear cozy pajamas and eat a warm bowl of oatmeal. Oh I love that!

I make so many recipes that have oats in them. Something about the texture of oats added to a cookie or bread really pleases me. I also love that they are good for us.

These bars combine natural, comforting ingredients to make a chewy, satisfying snack that is full of antioxidants and goodness for your body.



{Blueberry Oat Bars}
1-1/2 c. quick cooking oats
3/4 c. whole wheat flour
3 T. brown sugar
1/2 c. pure honey
1/2 c. unsweetened, all-natural applesauce
2 t. cinnamon
dash of salt
1 t. pure vanilla extract
2 c. fresh blueberries

{METHOD}
1. In a medium sized mixing bowl combine the oats, ww flour, cinnamon, and salt. Set aside.

2. In another medium-sized bowl, mix the brown sugar, honey, vanilla, and applesauce until well combined. Stir into the dry ingredients just until evenly combined.

3. With a large spoon (or your hands) fold in the blueberries. Press into a lightly sprayed 9x9 baking pan. You will need to press some of the blueberries into the thick mixture.

4. Bake in a 350 degree preheated oven for about 20 minutes, or until the bars are a soft golden brown color. Let cool and cut into squares.

{note}: If your bars turn out to be dry, add a little more applesauce and honey. I prefer mine a little drier and chewier because they are just easier to take along to work or on a trip.

Love the Blueberry Bar. At one time Starbucks had Blueberry Oat Bar that I loved and after awhile they discontinued it. Thank you for the recipe, now I can make my own. Thank you! Mary Ann :-)
