Baked Pumpkin Honey Oatmeal

I have a loving relationship with oatmeal.  When mixed with some of my favorite flavors (banana, cinnamon, pumpkin, chocolate, etc.), it turns into a divine meal of warm happiness that keeps me feeling full for hours.

I can make so many healthy foods with oats and they are inexpensive too.  This recipe doesn't contain any added processed sugars or junk food. Yet when you taste it, you will be reminded of pumpkin pie. 

*NOTE: If you prefer, you can replace the honey with maple syrup, agave nectar, or even brown sugar. You can add more for a sweeter result, but I try to keep the cals down so 2 T. is just right for me.

Variations: Delicious add-ins would be mashed banana, almonds, yogurt or mini chocolate chips. Keep in mind that all of these will up the calorie count. If you prefer a vegan version, omit the egg white.

{Baked Pumpkin Honey Oatmeal}
1 c. quick cooking oats or old-fashioned
1/2 c. pumpkin puree (not pie filling)
2 T. honey (with no fillers)
1 egg white
1/4 to 1/2 c. water (more/less for texture of oatmeal)
1 t. vanilla extract
1 t. ground cinnamon
1/4 t. nutmeg
dash of salt

1. In a small bowl, mix together the oats, cinnamon, nutmeg and salt. In another small bowl, mix together the pumpkin, honey, egg white, and water until smooth.

2. Mix wet ingredients with dry until well combined. Pour into a greased ramkin or small bread loaf. Sprinkle the top with cinnamon.

3. Bake in a preheated 350 degree oven for 20-25 minutes or until the top is a bit firm and golden. You can bake in less time if you prefer more moist oatmeal.

The top will be a bit crispy and I love that part, but as you sink in your spoon, you find the perfect, thick yet moist oatmeal. I can eat about half of this serving, if I'm really hungry, so make sure you have someone to share this with!

I made this today and it was really good! I'm in my college apartment and didn't have a ramekin or small bread loaf, so I made it in a muffin pan. It made four muffins, and I had two today and am planning on having the other two tomorrow. Thanks for the great recipe!
