You know I'm crazy about making Oat Balls for a healthier snack choice for myself. I make a batch every Friday and these little guys help curb my need for all the other nasty snacks that call my name throughout the day. I bring them to work and to the park, and not just for me, but the kids too.
They save me from Cadbury Eggs and Peanut Butter M&Ms.
So, for Easter break, I knew I'd need more than my usual batch to help me resist eating all of the boy's Easter candy. I followed the recipe in the link above, only instead of apricots and white chocolate chips, I added a handful of dried cherries and dark chocolate chips.
What a great combination! I keep them in the freezer and they are even better (and take longer to eat too).
Our Easter break was nice, despite Henry getting a respiratory virus. We did a lot of house work, including a new color for our living room and some handmade artwork for Henry's new playroom. I did some major decluttering too. Pictures of all that in later posts!
Sigh....I love my guys :)
