Chocolate & Oat Cookie Chews


Remember those no-bake chocolate cookies from your childhood? I think all of our moms made them and I swear I could eat about 10 of them in one sitting. There was just something about that chewy cookie that was perfect! They were right up there with Rice Krispy Treats in my opinion.

This is a bit of a healthier version of that chocolate chewy goodness. With some ingredients that are better for our bodies, I just feel better giving these to my kids. With fewer calories, I feel much better chowing down on them myself!

Chocolate and Oat Cookie Chews
yield: 20 mini-muffin cup cookies
2 c. quick-cooking rolled oats
3/4 semi-sweet chocolate chips
1 medium, ripe banana
1 t. vanilla extract
2 T. pure maple syrup or agave nectar
2 heaping T. of all natural peanut butter

1. Mash the banana in a medium mixing bowl. Mix in the vanilla and agave/maple syrup.

2. Slowly melt the chocolate chips in the microwave (about 1 minute, stirring at 15 second intervals). Stir until smooth and add in the peanut butter. Mix well.

3. Add the chocolate mixture to the banana mixture and mix well. Mix in the oats until they are all coated evenly.

4. Put a heaping tablespoon each into a no-stick mini-muffin pan cup. Press down with the back of the spoon to get a smooth bottom. Put into the fridge to set for about an hour. Remove with a spoon around the edges (they usually pop right out).

I have a yearning for chocolate and these look justifiably healthy :)
Anywhere? That's a hard one. I can think of a couple places that we'd enjoy - Bozeman, MT, Winona, MN, or our land in Castle Valley, UT. Can I spend part of the year in a couple places? That's our plan anyway! It definitely wouldn't be Puke Falls, that I can tell you!

Cant wait to try these Tanya. My kids love the no bake cookies in fact we made a batch last week and they were gone in a flash. I can't wait to get their opionion on these. I am sure they will be a hit.

Hi! I wonder if these cookies need to be kept in the refrigerator? If so, how many days do they keep and how do you recommend wrapping them? Thanks so much! My batch is "chilling" right now and I can't wait to try them!

Hi there! I am on a mission to lose a few lbs, and have very much been missing my 'chocolate snacks' every once and a while. Must try these this week!
As for a place to live... hard one... closer to family but still warm... Texas would be nice again!
