Remember those no-bake chocolate cookies from your childhood? I think all of our moms made them and I swear I could eat about 10 of them in one sitting. There was just something about that chewy cookie that was perfect! They were right up there with Rice Krispy Treats in my opinion.
This is a bit of a healthier version of that chocolate chewy goodness. With some ingredients that are better for our bodies, I just feel better giving these to my kids. With fewer calories, I feel much better chowing down on them myself!
Chocolate and Oat Cookie Chews
yield: 20 mini-muffin cup cookies
2 c. quick-cooking rolled oats
3/4 semi-sweet chocolate chips
1 medium, ripe banana
1 t. vanilla extract
2 T. pure maple syrup or agave nectar
2 heaping T. of all natural peanut butter
1. Mash the banana in a medium mixing bowl. Mix in the vanilla and agave/maple syrup.
2. Slowly melt the chocolate chips in the microwave (about 1 minute, stirring at 15 second intervals). Stir until smooth and add in the peanut butter. Mix well.
3. Add the chocolate mixture to the banana mixture and mix well. Mix in the oats until they are all coated evenly.
4. Put a heaping tablespoon each into a no-stick mini-muffin pan cup. Press down with the back of the spoon to get a smooth bottom. Put into the fridge to set for about an hour. Remove with a spoon around the edges (they usually pop right out).
