Tomato Zucchini Squares with Fresh Basil

Yesterday Henry and I hosted our very first playgroup at the house. It was so nice! I love talking with other moms and watching the kids interact, and we were lucky to have a group of nice moms and super sweet kids. Henry was a bit cranky, especially when he saw me holding a baby, but other than that it was a lot of fun!

I like to serve this appetizer whenever I have a group of women over. I make it up about a half-hour ahead and pop it in the oven so the aroma fills the air as they arrive. My favorite thing about it is that I get to use some of my fresh basil.

Tomato Zucchini Squares
1 refrigerated whole-wheat pizza crust
2 plum tomatoes
1 small zucchini
3 T. chopped fresh basil, chopped
1-1/2 c. mozzarella cheese
1/2 c. parmesan
3 cloves minced garlic
2 T. olive oil
sea salt

Roll out the dough to form a rectangle on a pizza stone or pan. Poke the dough with a fork in several spots. Put 1/4 c. of the mozzarella cheese over the crust. Thinly slice the zucchini and tomatoes and put over the top of the cheese in single rows.

Mix together the remaining mozzarella, chopped basil, garlic, parmesan and olive oil in a small bowl. Spread the mixture over the top of the zucchini and tomatoes. Sprinkle sea salt over the entire pizza.

Bake in a preheated 375 degree oven for about 20 minutes, or until the cheese is melted and the crust is golden. Cut into squares and serve.

We also served some chocolate covered strawberries and healthy but yummy Chocolate Chip Cookie Balls

And some jello cupcakes with marshmallow flowers and Mickey Mouse (because Henry loves his Mickey!)

Looks like a fun and yummy party! What a great way for Moms and kids to interact. Makes me wish Trina was 2 yrs old again - well.... maybe not exactly 2:)

Take a look at Bliss and Folly. Crazy recipe with noodles stuck into chunks of hotdogs, boiled, and then sauced. How about pasta stuck into some healthy vegie(?) that cooks in pasta time???
