I can't tell you how much we love eggs around here. We eat about 2 dozen a week (farm fresh-thanks Darla!), which includes using them in baking recipes.
We love them fried, poached, boiled, scrambled, baked and in an omelet. I think they are one of the world's most perfect foods. In fact, I myself could probably live without meat using eggs as my protein source.
I know some people despise them. I don't understand people like that ;)
Now I don't mean to brag, but I can make a mean, mean breakfast. It is my absolute favorite meal of the day to make, and I serve up the best of the best around here. Rich is a lucky man.
This summer I intend on sharing more of our favorite egg dishes with you. Some people are afraid of eggs. That's just not necessary!
This egg dish is one I like to make for the boys. It takes 2 minutes to whip up and throw in the oven, but I feel like I'm serving them a nutritious breakfast on a busy morning.
Baked Egg Cups
serves 2
2 eggs
1/8 c. milk or half & half
1 T. salsa
2 T. cheddar cheese
1 T. fresh chopped chives
1 T. parmesan cheese
salt/pepper to taste
Grease 2 muffin pan cups. Preheat the oven to 350 degrees. Beat the eggs and milk. Add in the chives, cheddar, salsa and salt/pepper. Pour mixture into prepared cups. Sprinkle with parmesan. Bake for about 20 minutes, or until eggs are fluffy and set.
**When I serve these to Henry, I sometimes pour pure maple syrup over the top. He loves it!

I love eggs and eat a boiled egg every morning. I will be trying this recipe that you posted today Saturday morning. Thanks again for something new to try.
I have a similar recipe adapted from the South Beach Diet....grease a small (6)muffin tin. Beat 6 eggs, salt and pepper to taste. Fill tins (1 egg per tin) and then add some fat-free shredded cheese, ham (or bacon) and even peppers and onions. Bake at 350 for 15 minutes. They are yummy and low carb to boot!
I love eggs, but probably only have them once a week, or less. Breakfast is usually a quick event unfortunately.

Since our chickens lay the best looking brown eggs daily, we do eat a lot of them. This is a recipe I will have to try! It sounds so simple.
We had to start buying those large 5 dozen egg things at the grocery store because we eat so many (and it's just two of us). That probably lasts us a little over a week? Eggs are my favorite. I can eat them morning, noon and night (and sometimes, I do).

LOVE these. My 2-year-old will eat about 6 at a time :-0!! I like that you can pop these in the oven and get ready while they bake, unlike scrambled eggs that need constant tending. Thanks so much! :)
