A Bruschetta Kind of Day


If you're trying to eat healthier and lose some pounds, you know by now that those starchy breads and carbs aren't going to help you achieve that goal.

But man do we love them. Why do the things that taste so damn good have to be so damn bad for you?

And sometimes I just want CRUSTY goodness without guilt.

That's where this delicious, no guilt bruschetta comes into play.

135 calories per serving (one half of a round with toppings) -and they are calories that count because they're good for you..

Bruschetta
Village Hearth Italian Herb & Olive Oil Slender Rounds (2 halves)
1/2 c. Trader Giotto's Bruschetta (found @ Trader Joe's)
2 t. extra virgin olive oil
1 t. minced garlic
2 T. shredded parmesan cheese

Preheat oven to 425 degrees. Mix the olive oil and minced garlic. Warm in microwave for 15-30 seconds. Spread 1 t. of oil on each half of the slender round. Top each half of round with 1/4 c. bruschetta and 1 T. of parmesan. Bake for 8-10 minutes or until crispy and cheese is melted.

I'm not a huge ice cream lover, but I have always just absolutely loved vanilla ice cream mixed with peanut butter. This version is healthier and still so delicious. Oh man!

That looks fantastic!!
I do not believe in avoiding carbohydrates. They make you feel good and if you are careful about making sure they have as much nutrition as possible, then it is part of a healthy diet! Kind of like dark chocolate- and cheese. If you only eat the good stuff, it is very satisfying.
You are looking so good, Tanya! I have been walking tons, and eating much more healthily, and I think my goals are well in my sights. I am looking forward to some down time, and hopefully relax a little. We really need it after this year!

Unfortunately, I am a big bread lover! But, I can say I have been eating a lot less of it since we have started our summer healthy eating kick w/ K:) Your bruschetta looks yummy. Yes, to summer and seeing you my friend!

We're supposed to be getting a Trader Joe's here in our area and I'm excited about that! Your brushchetta sounds so good.

I am a big lover of ice cream as well as peanut butter, so I'll give your "favorite" a try.

It's hard to choose just one favorite but it's probably Breyer's Mint Chocolate Chip.

The bruschetta looks so good!! I will for sure try that and the vanilla ice cream & peanut butter...yum! I live alone and need some new easy summer receipe's. Enjoy your summer and post often!
