Mud Hen Bars


My Twitter friend Transatlantic Blonde told me about this recipe for these delicious bars. She suggested them for a bake sale, but honestly they didn't make it that far as we claimed too many of them here at home. The crust is like a chocolate chip cookie, nothing unsual, but the part that makes it soooo delicious is the cripsy brown sugar and marshmallow crust that bubbles up as it bakes. Goodness, the mix of the two flavors is too good to pass up!

Mud Hen Bars
1/2 c. butter, room temp
1 c. granulated sugar
3 eggs
1-1/2 c. all-purpose flour
1 t. baking powder
1/4 t. salt
1 c. nuts chopped
1/2 c. semi-sweet chocolate chips
1 c. marshmallows
1 c. brown sugar

Beat together sugar and butter until creamy. Beat in 1 whole egg and 2 egg yolks (put aside the whites for later). IN a seperate bowl, mix together the flour, salt and baking powder. Add to the butter mixture and mix well. Spread into 9x13" pan. Sprinkle with marshmallows, nuts and chocolate chips.

Beat egg whites until stiff peaks form. Fold in the brown sugar. Spread over the mixture in pan. Bake in a preheated 350 degree oven for about 30 minutes or until bars are a deep golden brown and the crust is cooked through. Cool in pan and cut.

** I excluded the nuts so Henry could enjoy some also!

Goodness gracious Tanya those look awesome. I have heard of mud hen bars but never made them. Now that I see what they look like I have to make them. I can see why they didn't last for the bake sale.

I am SO going to try these!! but instead of flour I'm going to use beans. I recently tried beans (black) in a brownie recipe and it turned out phenomenal and healthy and I think this recipe would do really well with them as well! Thanks for the idea!

I tried to make these tonight, but are they supposed to be a little gooey?!?! I made them and let them cook for 30 minutes and they seemed brown but when I cut them it was still gooey so I stuck it back in the oven? But the end part that I tasted before putting them back in the oven and it was good!

Wowza!! I tweaked the recipe a bit but the 1st time I followed it except added 1 more egg white and 1/2 c brown sugar. They are unbelievable. I made the cookie crust a little more substantial, increased the marshmallows along with the meringue. I need them to be more sturdy. We ate the whole pan in one sitting. : ) Thank you!!
