Caramel Apple Gingerbread


When I'm working during the week and busy with laundry, baby, and a million other things on my days off, it's hard to plan a nice dinner, let alone a dessert. However, I like to spoil my guys and make one as often as possible. Therefore I'm constantly looking for super-fast, simple desserts that I think they might like. So when the good folks at Lucky Leaf sent me this recipe, along with some of their apple pie filling to give a try, I was excited to make it. It sorted of reminded me of Thanksgiving and Christmas all in one. It was very good and as easy as it gets!


Caramel Apple Gingerbread
1-14.5 oz. box gingerbread mix (found in the baking aisle by the cake mix)
1-21 oz. can Lucky Leaf Premium Apple Pie Filling
caramel-flavored ice cream topping (the more the better imo)
whipped topping


Heat oven to 350 degrees. Lightly greas 9x9x2" pan: set aside. In a large mixing bowl prepare gingerbread mix according to package instructions. Fold the apple pie filling into the batter (make sure apples are distributed evenly). Spread into baking pan. Bake for 30-35 minutes, or until wooden toothpick inserted in center of cake comes out clean. Let cool 30 minutes. Serve with lots of caramel sauce and a fresh dollop of whipped topping.

When I told my fiance I was going to make this he said it sounded horrible. Despite the comment I made it. The first thing out of his mouth, "MMMMM!" So thank you for the recipe, it was DELICIOUS!
