Popovers are light, airy bread rolls made with an egg batter. I love them because they are delicious and give you your bread "fill" without being full of calories and carbs. The best part is that they are super duper easy to make.

1-1/2 c. all-purpose flour
3/4 t. salt
3 large eggs
1-1/2 c. milk
4 T. butter
**You can use a popover pan, a muffin pan or individual custard cups
In a mixing bowl, combine the flour and salt; make a well in the center. Beat together the eggs and milk and pour into the center well:
Gradually stir egg mixture into flour mixture until batter is just slightly lumpy, being careful to not overmix. Let it rest for 30 minutes:
Preheat oven to 425 degrees. Place 1 t. of butter in the bottom of each cup of popover pan/muffin tin. Pop into oven to melt butter, removing promptly. Fill each cup with batter to about 3/4 full. Bake for about 20 minutes, or until popovers are puffed up and golden. Turn out immediately after baking and serve warm with a pat of butter. MMMmmmm!

Since these are very inexpensive these were my mother's go to treat while I was growing up if times were tough. We'd watch The Wide World of Disney and she'd whip up a batch of these. She served them with grape jelly...yum! I need to make some, I haven't had them in years.
Julie-that is such a great memory! I loved the Wide World of Disney too! Miss those days :)
