This is a typical morning's conversation with Sam:
"Mom can I have Oreos for breakfast?"
"Absolutely not"
"Pop Tarts?"
"No"
"Freezy Pop?"
"sigh..."
Breakfast is such an important meal for kids. T.V/magazine ads have tried to tell us, and our children, that a packaged piece of sugar-preservative-plasticy-looking junk is okay for them to eat as a balanced, nutritious breakfast. Are you kidding me? And that is supposed to sustain my son's appetite for the next several hours while he runs and plays and learns? It doesn't even begin to meet his nutritional needs.
This little recipe has plenty of protein, very little sugar, is super easy to prepare, and kids love to make it (and eat it!):
Egg in a Basket
2 slices of bread of your choice
2 T. real maple syrup
1 T. real butter
2 small or medium eggs
Grease 2 cups in a regular-sized muffin pan. Melt the butter and mix it with the maple syrup. For a healthier choice, use the real syrup:
Next use a large cookie cutter (or mug like I am here) to cut the crust off the bread and make a circular shape:
And brush it with the maple syrup/butter mixture on the top side:
Place the bread circle in the pan in a basket shape. Crack an egg into the bread nest and sprinkle with salt and pepper. Bake in a preheated 400 degree oven for about 15 minutes, or until egg is set and the bread is golden.

This looks great! I do a similar version using just a frying pan. I butter a slice of bread, cut a circle out of the middle with a juice glass, put the bread in the frying pan buttered side down, then crack an egg into the hole. When it starts to set, I flip it over and cook a little on that side. It's a quick, tasty breakfast!

Those look fabulous! We love our eggs, literally eat them every day. So this would be nice to shake it up a bit!
