Mashed Potato Casserole

After taking inventory on my over-flowing pantry for the pantry challenge, one thing is clear...too many potatoes! I don't know why, but I never check the pantry to see if I need potatoes, so I go to the store and buy a new bag. Before I know it, I have 3 bags of russets or baby reds sitting in there, growing sprouts! I made a huge batch of potato salad the other day, just to make it feel a bit like summer. It's one of Sam's favorites. He even eats it for a snack. That used up a good portion of them. Here's another recipe as a result of the pantry challenge. It's sort of like a twice-baked potato, but without the hassle of scooping out and filling potato shells:

Mashed Potato Casserole
10-12 medium russet potatoes
8 oz. cream cheese, softened
8 oz. sour cream
1 minced garlic
1 t. onion salt
salt and pepper to taste

Peel, dice, and boil the potatoes for about 15 minutes, or until they can be mashed easily with a fork. Drain and mash them with a potato masher, adding a dab of milk. In another bowl, mix together the cream cheese, sour cream, garlic, onion, and salt and pepper. Mix well. Mix into the potatoes

If you want them a bit creamier, add a bit more milk. Spoon into a greased casserole dish. Melt a couple of tablespoons of butter and pour over the top. Sprinkle with paprika:

Bake, uncovered, at 350 degrees for about 45-50 minutes, or until the top of the casserole is a soft golden brown at the peaks:

I like this recipe because you can freeze it, or make it up the night before and throw it in the next night for dinner. Fancier than mashed potatoes, yet still very easy! (My kind of recipe!)

I have made mashed potato casserole too when I have too many of those darn "I probably need potatoes" buy at the grocery store. Your pictures make me want a big scoop.
I am going to post a potato salad recipe today that I got out of a Penzey's catalog a few years ago. My family thinks it is the best and always asks for it.
Maybe we can do an indoor picnic this weekend to chase away the winter blahs! Have a good one!

I'm going to have to try this. My mashed potato casserole recipe (one of my favorite foods in the world and the recipe is posted on my blog under recipes - Thanksgiving Menu) is a little different as it has 2 eggs and no sour cream. Yum. Now I have mashed tater casserole on the brain - and a snowy cold day is a great day for mashed potatoes, isn't it?!?!

I love that casserole! I have to keep potatoes in the fridge b/c I once left a bag out in Ben's apartment while we were in college and his roomate moved it above the fridge...let's just say Ben hid in his room while I dealt with the damage and has a fear of produce in pantries.

Yuummmyyy! Now I do love mashed potatoes, and I have never used cream cheese! But, you know that sounds really good! Maybe some meat loaf with those potatoes. Yummy
