Carmelitas



With wind chills nearing -45, school was called yesterday and today. I was deeply saddened that I was forced to sleep in, lounge in my pj's until noon, and spend the day relaxing...ha! I loved every minute of it and will today too! I love spending time with my HOME. Hello kitchen..you have been neglected lately. Oh, hey there living room, it's been awhile since I rearranged you. Wow, refrigerator, you have seen better days! Yes, my home has missed me lately and I have missed it. It's the best place to be, after all.

Anything with oatmeal and chocolate chips is a good thing to me. Add some Smucker's caramel to the mix and I'm in heaven. Here's another recipe I've made in result of the
pantry challenge. Looking through the pantry, I discovered three big tubs of oatmeal. I also had a lone jar of Smucker's caramel, and I always have bags and bags of chocolate chips on hand. Carmelitas seemed to be the perfect recipe to use up some of these ingredients and tantalize our taste buds:

Carmelitas
Crust/Topping
2 c. Quick Oats
2 c. all-purpose flour
1-1/2 c. packed brown sugar
1 t. baking soda
1 t. vanilla extract
1/2 t. salt
1-1/4 c. butter (softened)

Filling:
2 c. semi-sweet chocolate chips
1 jar bottled caramel topping mixed with 3 T. flour


Spray a 9x13 pan and set aside. Mix together the soft butter and vanilla. Add this to all of the other ingredients listed for the crust/topping and mix well (I use my hands):






Divide this in half and press one half into the bottom of the sprayed pan: Bake for 10 minutes at 350 degrees, or until light golden brown:


Immediately after removing, pour the chocolate chips over the warm crust, spreading them so they are evenly distributed. Pour the caramel (make sure it's mixed with the flour) over the top of the chips and spread evenly:



Crumble the rest of the crust/topping mix over the caramel filling:



Bake again for about 20 minutes, or until the oatmeal topping is light golden brown. Remove and let cool completely before cutting.


My pantry challenge is going well. I like the idea of using up these ingredients that have been sitting, instead of heading to the store to buy over-priced, packaged junk! I've been on a kick with cleaning out everything this week. Clutter is the enemy. Clean, organized and fresh...aahhhhh. On another note, this is another thing I did yesterday:

I'm pretty excited even though I don't really know the first thing about one. I will probably spend half of my day trying to figure out how everything works on it. What are you all up to this weekend? Any exciting plans? I'd love to hear them!

The temp is -19 here this morning. That's nuts. I imagine WI is worse.
That recipe is amazing, here I am on the Better Me Group diet thingie, sigh! My pantry is getting sparse. I may be mixing tuna with p-nut butter soon. Don't think I'll be posting that recipe. So glad that you got your lap top, know that you've been wanting one. Stay warm dearie.

Oh this recipe sounds fantastic! I'll have to try it.. I have some oatmeal and chocolate chips hanging around (: Also, congrats on the laptop! And this weekend, my boyfriend and I are traveling home (it's only about and hour and a half away from our apartment)! It will be nice to see family for a few days!

Laptops are sooo liberating, you'll soon wonder how you ever mangaged without one. These carmalita's look divine, can't wait to try them. Maybe today??? Tuesday and yesterday, I made Puddles of Yum. I made them Tues. for a school function and again yesterday because they just that good and I was hoping to warm up the house. We're in IL and all I can say is BRRR. Kids were home and we were bored. Luckily I'm out of condensed milk, or I'd make some more!!!

I hear you about the cold. Here in Central NY it is bitter...but I had to go out in it! :-(
I am jealous that you can sit and look out at the cold world!!
Anyway, I love the Carmelitas you posted and I am going to make them this weekend because I have that random jar of caramel sauce that I found in the pantry. Since I have everything else, I don't have to buy a thing! YAY...thanks for this post!

Those cookie bars look soooo good. I would love to have time at home to work on things too. Hopefully, I will soon. Last year was a tough year. My mom was sick and past away in Dec. Most of my weekends were spent with her. My son-in-law was sick thru the summer and I helped my daughter with the kids. And I have a cleaning job in the evenings during the week.
That is why I don't have pictures of my house on my blog. I hope to start working on things soon. I have so many things stored away in closets, I tell everyone that my closets are beautiful!
Enjoy your free time. I hope that it is peaceful for you.

Well, Tanya, I made these today and the pan is half gone! My husband, son, his friend and my son-in-law were eating this warm out of the pan with vanilla ice cream! It is a huge hit and a keeper recipe!

I loved this recipe. I'm a one bowl kind of girl when it comes to recipes! They turned out great and we all loved them. They sure tasted yummy with a scoop of ice cream. If you're going to indulge, why not!?
