Holiday Cookies: Almond Butter Spritz

Whenever I need to make a large amount of a Christmas cookie for a school or church program, this is the recipe I pull out. They are very simple to make, fool-proof, and taste wonderful. The recipe makes several dozen. They also freeze perfectly so you can make them now and pull them out for Christmas. They have an almondy-butter taste that is heavenly. You will need a cookie-press:

Butter Spritz:
1 c. real butter
2/3 c. granulated sugar
1 egg
1 t. salt
2-1/2-3-1/2 c. flour
1-1/2 t. almond extract

Cream together the butter and sugar until smooth. Add the egg and extract; mix thoroughly. Add the dry ingredients and mix with hands. Dough will be like a stiff play-do consistency. If it's sticky to the touch, keep adding flour until you can roll it in your hand without it sticking at all. Otherwise it will be a pain in the neck to press out of the cookie press!:

At this point I usually cut the dough in half and add food coloring to one half. Pack it into your cookie press and press onto parchment-lined sheets in desired shape. Add sprinkles or candies as you please! Bake for 8 minutes in a 375 degree oven on the top shelf. Remove promptly and let sit on sheets for a few minutes, and then move to cooling racks.

The boys will be deer hunting this weekend, which means I'll be having some of those naked-broom-dancing kind of days here at home alone. How about naked baking? Or naked drawer-cleaning? Maybe naked Christmas shopping...online that is. Actually, in this weather, I think I'll stick to my old flannel pj bottoms and pink fuzzy slippers. That and a glass of hot chocolate with a candy cane stirring stick. Yes, this weekend will be just what I need! What are you doing this weekend? Whatever it is, I hope it's great!

Those cookies look really great.

My hubby is going hunting too next weekend. I don't mind it because it gives me time to spend w/ my mom and sister shopping and having some girl time!

Oh, these look yummy. And using a cookie press is fun. If my family was going to be gone for the weekend, I'd be making myself a cup of tea and eating every last one of those cookies myself. Oh. Maybe I better make more than ONE cup of tea. Ha ha. Have a great weekend!

Yum!!! I love the sound of these, they "smell" delicious!

We are participating in our cities annual Holiday Parade on Saturday morning, then taking our 16 year old to see Twilight with her friends in the afternoon.

Sunday is all about making a family breakfast, and cathing up on some Christmas card making so my cards will be ready to go into the mail next week.

I think I'll skip the shower on Sunday and stay in my jammies .... sounds wonderful!

Tomorrow is the day that we were to get all the kids together to do baking with Grandma. I got the stomach bug today so I'm sad that I'll probably miss out. We make the Spritz cookies every year-minus the almond flavoring. Might have to to try that! Enjoy your man-free weekend:)

I am home this weekend with my three boys. Dh is up in your neck of the woods (sort of) hunting (he is in Brule).

I am actually making the sugar cookie dough for the ones I frost. I plan on baking some other cookies this weekend. I made a batch of special K bars for the hunters to enjoy.

I love your blog!

Hi Tanya...I love these cookies but can never get the cookie press to cooperate...I'm spending the weekend inside.it's 28 degrees here in Atlanta...and after finding in my kitchen cabinets a treasure trove of Scandinavian china from 1970 I'll be doing alot of E-Bay listing!!
