Holiday Baking: Pistachio Cherry Bread



When I make up cookie tins and goodie baskets for neighbors and friends during the holidays, I like to have a little assortment of miniature bread loaves included in them. This bread is very festive and pretty and has a mildly sweet flavor that is pleasant and just right. You can add green food coloring to it to really make it look Christmasy, but I'm not a big fan of adding food coloring to anything unless I have to, so I don't add it:

Pistachio Cherry Bread
1 white cake mix
2 pkg. instant pistachio pudding
1/2 c. vegetable oil
4 eggs
3/4 c. chopped up maraschino cherries
1/4 c. water
1 c. sour cream

Combine together:
2 T. sugar
1 t. nutmeg
2 t. cinnamon


Preheat the oven to 350 degrees and grease either 2 large loaf pans or 4 small. Basically you just mix everything together until well combined:




Pour half of the mixture into the prepared pan. Next sprinkle the top with a layer of the cinnamon mixture:


Add the rest of the mixture over this layer and then sprinkle the top with more of the cinnamon mix. Sometimes I chop up pecans really fine and add them to the cinnamon mix for the top. Bake for 45-50 minutes. Remove from oven and let cool. When I serve this, I just mix a little bit of the cherry juice with about a T. of sugar and 1/4 c. cream cheese to spread on it. You can also just eat it plain or spread with butter.



I'm thrilled that tomorrow is my last day of work for the week! I can't wait to have some time off to stop and think for a minute. This looks wonderful. I have a co-worker who makes up gifts for everyone every single year that include lots of different small bread loaves and homemade jams and salsa. I swear, it's the one gift EVERYONE can't wait to get.

I love the little breads. My mom and I use to make pumpkin breads in small coffee cans and wrap them in plastic wrap and a pretty kitchen towel and you had a ready made gift. - I have never seen this recipe and can't wait to try it. Thanks tanya. P.S. the pudding cookies were great for our fellowship at church.

I am going to make some of these for gifts...pistachio and cherry...like spumoni flavors.

Here is a Spumoni Biscotti recipe for you:

2 1/2 cups all-purpose flour
1 1/2 tsps baking powder
1/4 tsp salt
1/2 cup butter, softened
1 cup sugar
2 eggs
1/2 tsp almond extract
1/2 tsp vanilla extract
1 cup shelled pistachios, coarsely chopped
1 cup well-drained maraschino cherries, patted dry and coursely chopped
small bag of semi-sweet chocolate chips

Directions
Combine flour, baking powder and salt;
Beat butter with sugar until fluffy; beat in eggs, one at a time and add extracts;
Add in flour mixture and beat well;
Stir in cherries and nuts;
Shape dough into 2 logs and place on baking sheets lined with parchment paper;
Bake at 325 degrees for 40 minutes or until edges start to brown;
Remove from oven and reduce heat to 250 degrees;
Allow logs to cool slightly;
Using a serrated or bread knife, cut logs into 1/2 inch thick, diagonal slices;
Transfer slices to baking sheets;
Bake for 15 to 20 minutes or until edges are golden and cookies are almost completely dry;
Cool on rack.
While cooling, melt chocolate in microwave;
Dip half of each cookie into melted chocolate; set on wax paper to dry;
Store in an airtight container.

These are so pretty at holiday time on the cookie tray...enjoy!

This looks SO GOOD! I have been trying to get here to ask you a question, too!
I finally found some puff corn! I was getting gas on Thanksgiving morning, and I walked into the corner store, and there it was! They had cheddar and butter. The kind you used was plain, wasn't it? Do you think butter would work, or would it be too buttery??? They SO did not have plain. So, if you can let me know what you think, next time you drop by, I would appreciate it!!
