Zucchini Bread Morning



I wish I could pull you through my computer screen so you could smell my house this morning. It's heavenly...fresh baking bread with cinnamon and sugar and plain old goodness.

I love zucchini because it's the perfect summer food! You can fry it, grill it, bake it, make it sweet, make is savory. It's good raw or cooked and takes on any flavor you add to it. This bread recipe is the only one you'll ever need! It's from my step-granmother's collection and truly is the best one I've made. Our whole family loves it and I make it all summer long. Sam and I love it so much that we spent all morning sneaking more and more:


Zucchini Bread/Muffins
1 c. brown sugar
1 c. granulated sugar
1 c. veggie oil (I like to substitute with unsweetened applesauce)
3 eggs
2 c. grated zucchini
3 c. all-purpose flour
2 t. cinnamon
1 t. baking soda
1 t. baking powder
1 c. chopped walnuts
1/2 t. salt

Grease and flour 2 large or 3 small loaf pans and preheat oven to 325. Cream together both sugars, veggie oil, and eggs. Put the fresh, unpeeled zucchini through the food processor (or grate it):



Add the zucchini to the creamed mixture:



Sift together all of the remaining ingredients and mix. Add to the creamed mixture slowly and combine completely:


Pour into greased bread pans. I also make a batch of muffins for Sam and I which I add miniature chocolate chips too (Rich doesn't like the chips in his so I leave them out of the loaf).


Bake for 50-60 minutes (muffins will only take about 35-40) or until knife inserted is dry.

I am going to have to try this one!!! My kids are not veggie eaters....but they will eat my carrot cake....I load it with twice as much carrots than the recipe calls...they gobble it right up! Have you used whole wheat flour with this recipe?-jess

This one will have to wait to our Summer though, as zucchinis are $9.50 kg. (2.2lbs.) in the stores at the moment!
