Comfort Food:Cheesy Scalloped Potatoes and Ham


Blogger was being a butt last night and wouldn't let me upload pictures, so I didn't get a chance to update. I'm having such a peaceful evening...alone. Rich and Sam are over at the in-law's cabin and I get the weekend to myself! They'll be home Sunday and we'll do something special for Mother's Day, but it is a real gift to have the house to myself for a couple of days! I love my boys, but sometimes a girl just has to have some alone time, right? I'm currently finishing up the book, The Pillars of the Earth by Ken Follet. It's a good read and despite the 900 + pages, it's actually a fast read because it's not real deep. I like some of the characters, and there are many. I especially love the era it takes place, 12th century England. The only fault to the book is that because he covers so many characters at a time, you never feel a real deep connection to any of them. I like a book that makes me really feel...crying or laughing or whatever. This one is worth reading for sure and very interesting, but not real fullfilling.
It's still been chilly here, so I decided to make this recipe. I actually made it up years ago because Rich liked cheesy potatoes and I didn't want to make the boxed ones. It's a bit time-consuming, but it's very good. Your hubby will like this one!
Cheesy Scalloped Potatoes
Ingredients:
5 cups sliced russet potatoes, peeled
1 c. chopped onion
1 can cream of mushroom soup
3/4 c. sour cream
1-1/2 c. shredded cheddar cheese
1 lb. chopped ham
Peel and wash the potatoes. Slice them as thin as you can get them. If you slice them thick, they will take much longer to bake and nothing is worse than a crunchy potato.
Next, mix together the soup, cheese, and sour cream. Chop the onion finely.
Mix together well. Add in the potatoes and mix. Pour into a well-greased casserole dish.
Bake, covered, in a 350 preheated oven for one hour. In the meantime, chop your ham.
Remove dish from oven and add the ham, mixing well. Potatoes will start to really stick, so make sure to scrape them from the sides at this time as well. Cover and put back in the oven for 30-60 more minutes, or until potatoes are soft. Remove from the oven and serve with the freeze and bake rolls I posted in an earlier post and some steamed broccoli. Comfort food!!
Now I'm off to enjoy a chick flick, some popcorn, and my home that is actually quiet and peaceful and ....who am I kidding, I miss them already!

I so would make it this weekend but alas I have big plans for tomorrow... going to see Vince Neil...yep the same Vince Neil from Motley Crue is coming to our little town! Doing all the crue songs! So excited!

And sorry about the cheese-I wasn't going off of a recipe since I don't use one. Add the cheese before you put it in the oven with the other ingredients :)

I wouldn't know what to do if I had the house to myself. Sounds like you have some ideas! You could always come visit me...lol

I have made this a few times and its SO delicious!
I thought I would give my hint about getting ALL THOSE potatoes sliced, I use my cheese grater, you know the 4 sided one?. yeah that one, I use the side for slicing obviously, makes quick work of it,,,,,,just watch those fingers when you get to the end of the potato.....hmm Im getting hungry for this meal just thinking about it.....*this is what's for dinner tonight* ;o)
