Cheesecake #2: Irish Creme Chocolate Chip Cheesecake
I just enjoy making cheesecake. There are so many different ways to be creative with them and every one loves it! This one is truly a sinful delight....sinful I tell ya!
Not only because it's good, but because it's kind of naughty too....it has Bailey's Irish Creme in it. Make this one the next time you have a grown-up's night. Believe me, you'll get rave reviews!
Irish Creme Chocolate Chip Cheesecake
2 c. graham cracker crumbs
1/4 c. sugar
6 t. melted butter
Preheat oven to 325. Spray 9" springform pan with non-stick spray. Lay down parchment strips over the sprayed pan and spray the parchment again. Combine the crumbs and sugar in a bowl. Add the melted butter and press into bottom of the pan and 1 " up the sides:
Bake for 7 minutes and cool.
2 1/4 lbs. cream cheese (this is a lot of cream cheese!)
1 2/3 c. sugar
5 eggs, room temp.
3/4 c. Bailey's Irish Creme
1 T. vanilla
1 c. mini semi-sweet chocolate chips
I use these mini Bailey's because 2 of them is the just right amount:
Using electric mixer beat cream cheese until smooth. Gradually mix in sugar. Beat in eggs, one at a time. Blend in Bailey's and vanilla:
Sprinkle 1/2 c. of the chocolate chips over the crust (man oh man does this make a delicious crust!):
Spoon in filling. Sprinkle remaining chocolate chips on top:
Bake 1 hour, 20 minutes until golden brown:
Cool completely: at least 4 hours or overnight is best.
1 c. chilled whipping cream
2 T. sugar
Beat whipping cream until stiff peaks form. Gradually add in sugar and beat until thick, but do not overbeat or will get grainy. Spread over cooled cake and garnish with chocolate curls.
This is very rich, so small pieces are perfect!
